Carob Nut Butter Cups

When I have a craving for Reece's Peanut Butter Cups, I now make this recipe instead. Once you taste these, you'll forgo the name brand ones for good.

















Ingredients:
• mini paper muffin cups
• nut butter
carob powder
• extra virgin coconut oil
• coconut palm sugar/xylitol or another sugar alternative

Directions:
Melt equal amounts of carob powder with coconut oil over low heat. Stir in some sugar (I prefer coconut palm sugar). Pour into mini muffin cups so they are 1/3 full. Add a spoonful of your favorite nut butter (I use Trader Joe's delicious almond flax seed butter) on top and lightly pack it down. Then melt some more carob powder and pour over the top until you have covered the nut butter. Put them in the refrigerator to cool and harden.
